The rammed-earth cellar door and restaurant look out over a vast wetland on the Murray floodplain — part of the property has been restored and is now listed under the international Ramsar convention. Self-guided boardwalk trails (from a short loop to longer walks) take you out across the lagoons, where you can spot pelicans, ibis, spoonbills and countless waterbirds. Inside, taste the Banrock Station range and settle in for lunch overlooking the water.
